  • ½ tsp salt

Instructions:


  1. Rinse quinoa under running water. Boil 1 cup of water, add quinoa, and cook for 15 minutes until soft. Let it cool.

  2. In a bowl, add cooked quinoa, chickpeas, cucumber, cherry tomatoes, and bell pepper.

  3. In a small bowl, mix olive oil, lemon juice, salt, and black pepper.

  4. Pour the dressing over the salad and toss well.

  5. Garnish with parsley and serve fresh.


2. Greek Salad


Ingredients

  • 1 cucumber, diced

  • ½ cup cherry tomatoes, halved

  • ½ red onion, sliced

  • ¼ cup black olives

  • ¼ cup feta cheese, crumbled

  • 1 tbsp olive oil

  • ½ tbsp red wine vinegar

  • ½ tsp dried oregano

  • ¼ tsp salt

  • ¼ tsp black pepper


Instructions:


  1. In a bowl, mix cucumber, cherry tomatoes, red onion, and black olives.

  2. In a separate bowl, mix olive oil, vinegar, oregano, salt, and black pepper.

  3. Pour the dressing over the salad and mix gently.

  4. Top with crumbled feta cheese and serve.


3. Sprouts & Paneer Salad


Ingredients:

  • ½ cup mixed sprouts (moong, chana, etc.)

  • ½ cup paneer, cubed

  • ½ small onion, chopped

  • ½ tomato, chopped

  • 1 tbsp lemon juice

  • ½ tsp chaat masala

  • ¼ tsp salt

  • 1 tbsp chopped coriander


Instructions:


  1. Steam sprouts for 5 minutes to make them soft. Let them cool.

  2. In a bowl, mix sprouts, paneer, onion, and tomato.

  3. Add lemon juice, chaat masala, and salt. Toss well.

  4. Garnish with chopped coriander and serve.
